Ingredients
- 1 large head cauliflower
- 1 cup whole wheat flour
- 1 cup low fat milk
- 1 cup panko bread crumbs
- Pink Himalayan Salt
- Freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic, minced
- 1/2 tablespoon of grated ginger
- 2/3 cup sweet chili sauce (I found a good one at Aldi’s)
- 1/3 cup low-sodium soy sauce
- Juice of 1 lime
- Cooked Brown Rice
- A little butter (depends on how much you want to use for rice)
- Sesame seeds for garnish
- Green onions for garnish
- Preheat oven to 400°. Dredge cauliflower in flour, milk and bread crumbs (in that order) and transfer to a baking sheet lined with a rack or a parchment paper. Season with salt and pepper.
- Bake until deeply golden and crispy, 20 to 30 minutes.
- Meanwhile…make the sauce: In a small pot over low heat, heat olive oil. Add garlic and ginger and cook until softened or about 2 minutes. Then add sweet chili sauce, soy sauce and lime juice. Simmer for 5 minutes until thickened.
- Transfer cauliflower to a large bowl and add sauce. Toss gently until completely coated.
- For the fried brown rice: add butter, soy sauce, some minced garlic and a bit of the lime juice in a small bowl and microwave until fully melted. Mix the sauce and brown rice in a pan and let it cook a little.
- Serve cauliflower over rice with sesame seeds and green onions.
