General Tso Cauliflower with Fried Brown Rice

Ingredients

  • 1 large head cauliflower 
  • 1 cup whole wheat flour
  • 1 cup low fat milk
  • 1 cup panko bread crumbs
  • Pink Himalayan Salt
  • Freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 tablespoon of grated ginger
  • 2/3 cup sweet chili sauce (I found a good one at Aldi’s)
  • 1/3 cup low-sodium soy sauce
  • Juice of 1 lime
  • Cooked Brown Rice
  • A little butter (depends on how much you want to use for rice)
  • Sesame seeds for garnish
  • Green onions for garnish

 

  1. Preheat oven to 400°. Dredge cauliflower in flour, milk and bread crumbs (in that order) and transfer to a baking sheet lined with a rack or a parchment paper. Season with salt and pepper.
  2. Bake until deeply golden and crispy, 20 to 30 minutes.
  3. Meanwhile…make the sauce: In a small pot over low heat, heat olive oil. Add garlic and ginger and cook until softened or about 2 minutes. Then add sweet chili sauce, soy sauce and lime juice. Simmer for 5 minutes until thickened.
  4. Transfer cauliflower to a large bowl and add sauce. Toss gently until completely coated.
  5. For the fried brown rice: add butter, soy sauce, some minced garlic and a bit of the lime juice in a small bowl and microwave until fully melted. Mix the sauce and brown rice in a pan and let it cook a little.
  6. Serve cauliflower over rice with sesame seeds and green onions.
